Avocado, tomato, sautéed onions, spinach, vegan bacon, mayo, and hummus make up this delicious sandwich.

Let’s dive into just some of the amazing nutrients that make up this banging everything plant bagel.

Key Nutrients

Avocado is high in healthy fats. Specifically, omega-3 fatty acids as well as numerous micronutrients- including vitamins B6, C, & E.

Raw tomato gives us a great amount of vitamin C (good for our immune system!) as well as some natural sugars that are a beautiful source of energy.

Fresh spinach leaves gives us nutrients that are crucial for our human health. They are absolutely a superfood. The benefits are honestly endless.

Vitamin K, C, E, B2, B3, B6, B9 are most of the vitamins spinach provides. Minerals include potassium, manganese, magnesium, iron, calcium, zinc, and more.

The other ingredients provide even more nutrition and healthy, necessary benefits that I could truly go on forever about.

So with that being said…

Let’s get started!

INGREDIENTS:

2 Everything Bagels

6 Strips Plant-Based Bacon

1 Medium Tomato

1 Avocado

1/2 Cup Spinach Leaves

1/2 Cup Yellow Onion

2-3 Tbsp. Hummus

2-3 Tbsp. Vegan Mayonnaise

*A few key notes on the recipe ingredients-

I personally use the Trader Joe’s brand of everything bagels. I also love to get my produce from there.

The hummus can be any desired kind- I use just an original hummus. (Although I’ve tried a few different types and they are also delicious on this sandwich!)

Lastly, I get the vegan mayonnaise and plant-based bacon from any chain store like Giant, Target, Walmart, Safeway, etc. because I can almost always find them there.

Begin The Recipe

To begin, warm two skillets (for onions & bacon- one small, one medium) on medium heat with about 1/2-1 tbsp. olive oil in each.

Next, wash & cut 1/2 cup yellow onion into quarters and slice the quarters to create rings for the sandwich.

Place the sliced yellow onions into the smaller skillet and sauté for about 5-7 minutes, or until they are translucent.

In the other skillet, place the 6 bacon strips to cook evenly on both sides.

Occasionally stir the onions and flip the bacon.

Next, slice the everything bagels and place them in the toaster until desired.

Finish up prepping by washing and thinly slicing 1 medium tomato and 1 avocado.

Once the onions are sautéed and the bacon is cooked, we can place in front in order to assemble our sandwich!

Assemble Everything Plant Bagel

Begin by spreading hummus on the bottom half and placing 3 bacon strips on top of hummus.

Next, place the sautéed onions on top of the bacon, followed by the tomato and avocado, topped off with the washed 1/2 cup spinach leaves.

The last step is spreading mayonnaise on the top half of the bagel.

Place the top bagel half on the rest of the sandwich, serve and enjoy!

Ingredients
  

  • 2 Whole Everything Bagels
  • 6 Strips Plant-Based Bacon
  • 1 Medium Tomato
  • 1 Medium Avocado
  • 1/2 Cup Spinach Leaves
  • 1/2 Cup Yellow Onion
  • 1/3 Cup Hummus
  • 1/4 Cup Vegan Mayonnaise

Instructions
 

  • Heat about 1/2-1 tbsp. olive oil on medium in 2 separate skillets. (small & medium)
  • Slice 1/2 yellow onion into thin strips and place in smaller, heated skillet.
  • Place 6 plant-based bacon strips into other heated skillet.
  • Stir onions occassionally and flip bacon at least once to fully cook all thoroughly, set both skillets aside once finished.
  • Now thinly slice tomato and avocado, set aside.
  • Half bagel if not already halved and place in toaster for desired time.
  • Spread hummus on bottom half of bagel while spreading vegan mayonnaise on the top half.
  • Assemble bagel by placing bacon strips, sautéed onions, tomato, avocado, and spinach leaves on top of the hummus-spread bagel half.
  • Top with top half bagel and enjoy.
