Vegan ‘tuna’ wraps, made from chickpeas, make an absolutely incredible & healthy lunch or snack.
Their base is the vegan tuna salad, which is an easy recipe that is a must-have in your fridge for so many other recipes!
(Therefore this recipe is a 2 part recipe, however total time is around 30 minutes)!
These vegan tuna wraps also include fresh veggies like tomato, spinach leaves, avocado, and cucumber.
We can then only expect great nutrients and energy from them!
KEY NUTRIENTS
Spinach leaves are a superfood, providing us with so many beneficial micronutrients like vitamins E, K, etc.
Cucumbers are high in vitamins K and B5, etc.
Avocado is loaded with healthy fats, from a plant-based source.
The monounsaturated fats is heart– healthy by helping reduce cardiac inflammation, among many other great benefits.
The vegan tuna salad itself is also loaded with crucial nutrients, all through plant-based sources (which you can read about on its recipe if interested)!
So with all of that being said…
Let’s get started.
INGREDIENTS:
– 5 Large Flour Tortillas
– Vegan ‘Tuna’ Salad
– 1 Medium Roma Tomato
– 1/2 Medium Cucumber
– 1 Avocado
– 1 1/2 Cup Spinach Leaves
– 1/3 Cup Cilantro Leaves
– 1/4 Cup Old Bay Mayonnaise
OLD BAY MAYO
– 1/2 Cup Plant-Based Mayonnaise
– 1 Tbsp. Yellow Mustard
– 1 Tsp. Garlic Powder
– 1 Tbsp. Old Bay
– 1/2 Tsp. Smoked Paprika Powder
*Key notes for this recipe- the vegan tuna salad is a DIY recipe that can be made and stored in your fridge.
I used up this entire batch (which is the exact recipe linked above) but of course, you can always do less wraps and save the rest of your tuna salad for other uses!
Another key note is the old bay mayonnaise. This is a super easy, at-home recipe I whipped up as the spread.
Combine all of the old bay mayo ingredients in a small bowl and set aside.

BEGIN THE RECIPE
Begin by washing all of the vegetables- tomato, avocado, cucumber, spinach leaves, and the cilantro.
Start prepping by dicing the tomato.
Slice the cucumber into 1/4 inch round pieces. (You can save any excess cucumber slices in a sealed container in the fridge for under your eyes treatment, use them for cucumber water, etc.).
De-stem the cilantro and roughly chop.
Lastly, prep the avocado by thinly slicing into strips.
Now, we can assemble the wraps!
ASSEMBLE VEGAN TUNA WRAPS
Begin by spreading about a spoonful (1 tbsp. or less) of old bay mayonnaise in the center of the tortilla.
Next, place desired amount of spinach leaves on top of the old bay mayo spread.
Put desired chickpea tuna salad amount on top of the spinach leaves. (I put about 3 small spoon scoops like below).
Next, place about 3-4 thinly sliced avocado on top.
Follow that by placing a few small spoon scoops, or desired amount, of chopped tomato.
Then, add 3-4 cucumber slices, or desired amount on top.
Lastly, top with a nice sprinkle of desired cilantro.
Now that our tortilla is filled, we can wrap it.
Fold the left and right side of the tortilla, and now wrap the 3rd side over the fillings while holding left and right sides in.
Finish by wrapping tightly.
Cut the wrap in half to complete your first chickpea ‘tuna’ wrap!
Make your desired number of wraps (5-6 depending on portions).
Plate & enjoy!

- Next (if desired) in a small bowl, combine all ingredients of old bay mayonnaise and set aside.
