Vegan Tuna Wraps

Enjoy a delicious chickpea based ‘tuna’ wrap with fresh veggies and herbs!

Ingredients
  

  • 5 Large Flour Tortillas
  • Vegan Tuna Salad (DIY recipe- entire batch for 5 large wraps)
  • 1 Medium Roma Tomato
  • 1/2 Medium Cucumber
  • 1 Avocado
  • 1 1/2 Cup Spinach Leaves
  • 1/3 Cup Cilantro Leaves
  • 1/4 Cup Old Bay Mayonnaise Optional (recipe below)
Vegan Old Bay Mayonnaise
  • 1/2 Cup Plant-Based Mayonnaise
  • 1 Tbsp. Yellow Mustard
  • 1 Tsp. Garlic Powder
  • 1 Tbsp. Old Bay
  • 1/2 Tsp. Smoked Paprika Powder

Method
 

Begin The Recipe
  1. To begin, make vegan tuna salad (recipe filed under DIY and linked above).
  2. Next (if desired) in a small bowl, combine all ingredients of old bay mayonnaise and set aside.
  3. Wash all vegetables- tomato, avocado, cucumber, spinach leaves and the cilantro.
  4. Dice the tomato and set aside.
  5. Slice the cucumber into 1/4 inch thick round pieces and set aside.
  6. De-stem the cilantro and roughly chop, set aside.
  7. Lastly, thinly slice the avocado into strips.
Assemble Vegan Tuna Wraps
  1. Begin by spreading about a spoonful or less of old bay mayonnaise in the center of the first tortilla.
  2. Next, place desired amount of spinach leaves on top of the old bay mayo spread.
  3. Put desired amount of chickpea, vegan tuna salad on top of spinach (2-3 spoon scoops).
  4. Place about 3-4 thinly sliced avocado on top.
  5. Follow that by placing a few small spoon scoops or desired amount of chopped tomato.
  6. Then, add 3-4 cucumber slices, or desired amount on top.
  7. Lastly, top with a nice sprinkle of desired cilantro.
  8. Now, wrap tortilla by folding the left and right side inwards, and the 3rd side over those.
  9. Finish by wrapping tightly.
  10. Cut the wrap in half to complete first vegan tuna wrap!
  11. Make your desired number of wraps (5-6 depending on portions).
  12. Plate & enjoy!
