Vegan banana bread- at its‘ finest.

It is deliciously warm, moist, soft and literally melts in your mouth.

Get ready for the amazing aroma of banana, cinnamon, and vanilla to fill your kitchen (and entire house)!

This recipe is made from scratch and the banana bread batter is actually quite simple.

So what makes up this delicious dessert and what key nutrients can we get?

KEY NUTRIENTS

With mashed bananas being one of the main ingredients, you receive a nice dose of potassium, vitamin B6, vitamin C and some dietary fiber.

Another main ingredient is whole wheat flour which provides us with natural carbohydrates– giving us our main source of our energy.

Whole wheat flour also gives us some plant-based iron and plant-based protein!

A key bonus ingredient in this vegan banana bread is chia seeds.

Chia seeds give us a great boost of omega-3’s, fiber, plant-based protein, and more!

Of course with almost any dessert, we do add sugar. Therefore, try to get an organic and raw brand to make it healthier.

So with all of that being said…

Let’s get started.

Vegan banana bread baked

INGREDIENTS:

2 Ripe Bananas

2 Cups Whole Wheat Flour

1/2 Cup Sugar

1 Cup Plant-Based Milk

1/4 Cup Softened Plant-Based Butter

2 Tsp. Maple Syrup

1 Tsp. Vanilla Extract

2 Tsp. Baking Powder

1/2 Tsp. Baking Soda

2/3 Tsp. Cinnamon Powder

1/4 Tsp. Salt

3 Tbsp. Chia Seeds

1/4 Cup Water

*Do note that the bake time is 55-65 minutes long so just prepare and plan accordingly.

BEGIN THE RECIPE

First, preheat the oven to 375 F.

Next, in a small bowl, soften 3 tbsp. chia seeds with 1/4 cup water.

(This is not the consistency of a chia seed egg since we are only adding enough water to soften the chia seeds).

Allow the chia seeds to soften by absorbing the water, then you can set this aside until later needed.

Now, we can start the batter.

START THE BATTER

To make the batter, gather all of the ingredients.

We will combine 2 cups whole wheat flour and 1/2 cup sugar in a large bowl first.

Continue to mix in the rest of the dry ingredients into this bowl- 2 tsp. baking powder, 1/2 tsp. baking soda, 2/3 tsp. cinnamon powder, and 1/4 tsp. salt.

Next, in another bowl you can mix the wet ingredients.

Start by adding 1 cup plant-based milk, 1/4 cup melted plant-based butter, 2 tsp. maple syrup and 1 tsp. vanilla extract.

Now we will want to mash the bananas.

In a separate bowl (or if they fit in the same bowl as the wet ingredients), mash 3-4 ripe bananas.

I use a potato masher or a fork to do so. You can leave chunks that are about 1/4 inch in diameter.

COMBINE & FINISH THE BATTER

Now we can combine all of the ingredients to make this delicious, vegan banana bread batter.

Begin by adding the pre-mixed wet ingredients into the large bowl with dry ingredients and stir until mostly combined.

Next, add the mashed bananas and softened chia seeds.

Stir until fully combined and when you no longer see any clusters of dry flour.

BAKE THE VEGAN BANANA BREAD

Begin by greasing 9”x5” bread pan and bake for about 50-60 minutes (or until no batter is left on the knife when poking into the middle of the loaf).

Let sit for about 10 minutes to cool before slicing.


Serve and enjoy.

(Some plant-based butter on top is delicious also)!

Store in a sealable container in the refrigerator for up to a week.

  • In a separate bowl you can add the wet ingredients; 1 cup of plant milk, ¼ cup of melted plant-based butter, 2 tsp. of maple syrup and 1 tsp. of vanilla extract.
