Before you begin prep preheat oven to 375 degrees F.
In a small bowl add 3 tbsp. of chia seeds and ¼ cup of water. Combine and let sit while you gather other ingredients.
In a large bowl combine 2 cups of whole wheat flour and ½ cup of sugar.
Mix in 2 tsp. of baking powder, ½ tsp. of baking soda, ⅔ tsp. of cinnamon powder, and ¼ tsp. of salt.
In a separate bowl you can add the wet ingredients; 1 cup of plant milk, ¼ cup of melted plant-based butter, 2 tsp. of maple syrup and 1 tsp. of vanilla extract.
In another bowl (or in the same bowl as wet ingredients), mash 3-4 ripe bananas. You can leave chunks that are about ¼ inch in diameter.
Combine
Add the pre-mixed wet ingredients into the large bowl with dry ingredients and stir until mostly combined.
Add mashed bananas and chia seed egg and stir until fully combined and when you no longer see any clusters of dry flour.
Bake
Pour batter into a greased 9”x5” bread pan and bake for about 50-60 minutes or until no batter is left on the knife when poking into the middle of the loaf.
Let sit for about 10 minutes before slicing.
Enjoy as is or with a little bit of plant-based butter!
Store in a sealed container in the refrigerator for up to a week.
