Vegan Banana Bread

Ingredients
  

  • 3-4 Ripe Bananas
  • 2 Cups Whole Wheat Flour
  • ½ Cup Sugar
  • 1 Cup Plant Milk
  • ¼ Cup Melted Plant-Based Butter
  • 2 Tsp. Maple Syrup
  • 1 Tsp. Vanilla Extract
  • 2 Tsp. Baking Powder
  • ½ Tsp. Baking Soda
  • Tsp. Cinnamon Powder
  • ¼ Tsp. Salt
  • 3 Tbsp. Chia Seeds
  • ¼ Cup Water

Prep

  • Before you begin prep preheat oven to 375 degrees F.
  • In a small bowl add 3 tbsp. of chia seeds and ¼ cup of water. Combine and let sit while you gather other ingredients.
  • In a large bowl combine 2 cups of whole wheat flour and ½ cup of sugar.
  • Mix in 2 tsp. of baking powder, ½ tsp. of baking soda, ⅔ tsp. of cinnamon powder, and ¼ tsp. of salt.
  • In a separate bowl you can add the wet ingredients; 1 cup of plant milk, ¼ cup of melted plant-based butter, 2 tsp. of maple syrup and 1 tsp. of vanilla extract.
  • In another bowl (or in the same bowl as wet ingredients), mash 3-4 ripe bananas. You can leave chunks that are about ¼ inch in diameter.

Combine

  • Add the pre-mixed wet ingredients into the large bowl with dry ingredients and stir until mostly combined.
  • Add mashed bananas and chia seed egg and stir until fully combined and when you no longer see any clusters of dry flour.

Bake

  • Pour batter into a greased 9”x5” bread pan and bake for about 50-60 minutes or until no batter is left on the knife when poking into the middle of the loaf.
  • Let sit for about 10 minutes before slicing.
  • Enjoy as is or with a little bit of plant-based butter!
  • Store in a sealed container in the refrigerator for up to a week.
