Spanish tomato toast is a super easy & delicious plant-based breakfast!

This quick breakfast (or appetizer), known as pan con tomate, is a staple in Spain.

It usually consists of a perfect toast with olive oil, grated tomato, garlic, with salt and pepper.

All of this provides us with a nice boost of nutrients to start the day off fueled.

With that being said, we can go even further in discovering some of the key nutrients in this beautiful and light breakfast.

KEY NUTRIENTS

Exploring the key nutrients, we see that the toppings on the vegan toast include tomato, garlic, and olive oil.

Specifically the grated tomato spread provides us with potassium and vitamins like vitamin A and vitamin C.

Also, tomato gives a nice boost of lycopene, which is an antioxidant known to reduce risk of certain cancers while helping to promote heart health.

Next, garlic provides us with some other great vitamins and minerals like vitamin B6, vitamin C, manganese, selenium, and calcium.

Lastly, olive oil provides us with the heart healthy fats that we require, from a plant-based source.

So with all of that being said…

Let’s get started.

INGREDIENTS:

2 Slices of Vegan Bread

1/2 Large Beefsteak Tomato

1 Garlic Clove

1 Tbsp. Olive Oil

1/2 Tsp. Salt

1/4 Tsp. Pepper

A key note for this recipe is that it’s super simple- so doubling or tripling it, (even just the tomato blend to store for later use) is always easy!

BEGIN THE RECIPE

To begin, if you don’t have a toaster oven, preheat oven to 350 F.

Now, we can chop 1 garlic clove in half.

Rub the chopped side of garlic on top of each bread slice.

Next, drizzle about 3/4 tsp. olive oil on each slice of bread as well (total 1 1/2 tsp. olive oil).

Toast breads for about 5-8 minutes in oven, or until desired brown.

While the breads are toasting, we can get started on the tomato mixture.

MAKE TOMATO MIXTURE

To make the tomato mixture, begin by grating 1/2 large beefsteak tomato into a small bowl.

Next, add 1 1/2 tsp. olive oil, 1/2 tsp. salt, and 1/4 tsp. pepper into the bowl of grated tomato.

Stir to combine.

It is optional to grate a very small amount of the raw garlic clove into the tomato mixture.

(Some people have issues with raw garlic, so it’s always up to personal desire if you would like to add it)!

FINISH SPANISH TOMATO TOAST

Remove toasted breads from oven or toaster.

Allow toasted breads to cool for a few minutes.

Next, top each toast with desired amount of grated tomato mixture.

If desired, sprinkle toasts with extra seasonings to taste.

Excess grated tomato mixture can be stored in the refrigerator sealed for at least a few days, for further breakfasts (or appetizers/snacks)!

  • Stir to combine.
  • It is optional to now grate a very small amount of the raw garlic clove into the tomato mixture (personal desire for raw garlic)!

Finish Spanish Tomato Toast

  • Remove toasted breads from oven or toaster and allow time to cool.
  • Next, top each toast with desired amount of grated tomato mixture.
  • If desired, sprinkle toasts with extra seasonings to taste.
  • If there is excess grated tomato mixture, it can be stored in the refrigerator sealed for at least a few days for future meals!
  • Plate toasts. Enjoy!
