INGREDIENTS
– 4 Vegan Sandwich Buns
– 2 Cans of Jackfruit (14 oz. cans, drained is 8 oz. each)
– 3-4 Med./Large Garlic Cloves
– 1/2 Cup Yellow Onion
– 1/4 Cup Purple Onion
– 2 Tbsp. Olive Oil
– 1/2 Cup + 2 Tbsp. Barbecue Sauce (Trader Joe’s Kansas City Style brand)
– 1 Tbsp. Liquid Smoke (Liquid Aminos)
– 1 Tbsp. Vegan Worcestershire Sauce
– 3 Tbsp. Vegetable Broth
– 1 Tbsp. Salt
– 1 Tsp. Pepper
– 1 Tsp. Cumin
– 1/2 Tsp. Cayenne Pepper
– 4 Tsp. Plant-Based Mayonnaise or Sour Cream (Optional on sandwich bun)
BEGIN THE RECIPE
First, preheat the oven to 400 degrees F.
Now, to begin the recipe, start by preparing the jackfruit.
We will use a pan on the stove to cook the jackfruit mixture and then place it in the oven to bake to ensure it has the best taste!
Rinse jackfruit thoroughly (I use 2 cans, you can always use fresh jackfruit and get about 16 oz. total) to make sure all of the canned brine is removed.
Dry the jackfruit with a paper towel.
Once dried, shred the jackfruit with a potato masher, two forks or your hands. (Any pieces that are hard, you can slice into smaller pieces).
Set all of the shredded jackfruit aside in a bowl.
Next, chop 1/2 cup yellow onion and 3-4 garlic cloves (they will go first in the pan).
Set aside and we can now begin cooking in the pan.
COOK JACKFRUIT ON THE PAN
Heat a medium sized pan with 2 tbsp. olive oil on medium heat.
Add the chopped yellow onion and chopped garlic for about 3 minutes, stirring occasionally.
Next, add the shredded jackfruit to the pan and the seasonings: 1 tbsp. salt, 1 tsp. pepper, 1 tsp. cumin and 1/2 tsp. cayenne pepper.
Stir to fully combine and let cook for about 3 minutes.
Add and stir in 3 tbsp. vegetable broth and cover for about 5 minutes.
Now, add and stir in 1 tbsp. barbecue sauce, 1 tbsp. liquid smoke (liquid aminos), and 1 tbsp. vegan Worcestershire sauce.
Cover for an additional 2 minutes.
Remove the pan from the heat afterwards.
BAKE JACKFRUIT IN THE OVEN
Now, prepare a greased baking sheet or greased glass dish (that’s what I use) for the jackfruit mixture.
Spread jackfruit mixture evenly onto the greased baking sheet or dish.
Place in the oven for about 10 minutes and then remove.
Mix jackfruit around and add additional 1/2 cup barbecue sauce and combine to coat jackfruit evenly.
Place back in the oven for another 10 minutes.
(We can move to start preparing the sandwich bread and toppings while vegan pulled ‘pork’ bakes).
Remove from the oven once finished and we can start making sandwiches with it!
MAKE VEGAN PULLED PORK SANDWICHES
Begin by chopping about 1/4 cup purple onion into thin slices and soak them in a bowl of cold water for a few minutes.
Next, prepare the sandwich buns by toasting them (this is an optional step).
Also, this jackfruit mixture makes about 4-5 sandwiches, but of course less sandwiches can be made and the pulled ‘pork’ stored in the refrigerator for later!
Once the breads are toasted, add an optional 1 tsp. plant-based mayonnaise or sour cream to each sandwich bun.
Now, add desired amount of jackfruit mixture to each sandwich (I use roughly 1/2 cup each).
Lastly, top sandwich with a few desired slices of purple onion to add extra flavor.
Serve with chips, pickles, or desired sides!

- Place back in the oven for about 10 minutes.
- (Move onto making sandwiches while pulled ’pork’ cooks).
- Remove from the oven once finished cooking.
