Vegan Pulled Pork Sandwiches

Enjoy a vegan, barbecue pulled pork sandwich made from jackfruit!

Ingredients
  

  • 4-5 Vegan Sandwich Buns
  • 2 Cans Jackfruit (14 Oz. Each)
  • 3 Large Garlic Cloves
  • 1/2 Cup Yellow Onion
  • 1/4 Cup Purple Onion
  • 2 Tbsp. Olive Oil
  • 5/8 Cup Barbecue Sauce (Trader Joe’s Kansas City Style Brand)
  • 1 Tbsp. Liquid Smoke (Liquid Aminos)
  • 1 Tbsp. Vegan Worcestershire Sauce
  • 3 Tbsp. Vegetable Broth
  • 1 Tbsp. Salt
  • 1 Tsp. Pepper
  • 1 Tsp. Cumin
  • 1/2 Tsp. Cayenne Pepper
  • 4 Tsp. Plant-Based Mayonnaise or Sour Cream (Optional on Sandwich Bread)

Method
 

Begin The Recipe
  1. Preheat the oven to 400 degrees F.
  2. Begin with preparing the jackfruit by rinsing the 2 canned jackfruit thoroughly to make sure all of the canned brine is removed.
  3. Dry the jackfruit with a paper towel.
  4. Once dried, shred the jackfruit using a potato masher, 2 forks, or your hands. Any hard pieces you can slice into smaller pieces.
  5. Set aside the jackfruit in a bowl.
  6. Chop the 1/2 cup yellow onion and 3 garlic cloves, set aside.
Cook Jackfruit In A Pan
  1. Heat a medium sized pan with 2 tbsp. olive oil on medium heat.
  2. Add the chopped yellow onion and garlic for about 3 minutes, stirring occasionally.
  3. Next, add the shredded jackfruit to the pan and seasonings: salt, pepper, cumin and cayenne pepper.
  4. Stir to fully combine and let cook for about 3 minutes.
  5. Add 3 tbsp. vegetable broth, stir and cover for about 5 minutes.
  6. Add 1 tbsp. barbecue sauce, 1 tbsp. liquid smoke and 1 tbsp. vegan Worcestershire sauce.
  7. Stir to combine and cover for about 2 minutes, then remove from heat.
Bake Jackfruit In The Oven
  1. Move the jackfruit mixture onto a greased baking sheet or greased glass dish and spread evenly.
  2. Place sheet or dish in the oven for about 10 minutes and then remove.
  3. Mix jackfruit around and add additional 1/2 cup barbecue sauce and combine to coat jackfruit evenly.
  4. Place back in the oven for about 10 minutes.
  5. (Move onto making sandwiches while pulled ’pork’ cooks).
  6. Remove from the oven once finished cooking.
Make Vegan Pulled Pork Sandwiches
  1. Begin by chopping about 1/4 cup purple onion and soak them in a bowl of cold water for a few minutes.
  2. Next, prepare the sandwich buns by toasting them (if desired).
  3. Also, the jackfruit mixture makes about 4-5 sandwiches but less sandwiches can be made and the pulled ’pork’ can be stored and refrigerated for later.
  4. Add an optional 1 tsp. plant-based mayonnaise or sour cream to each toasted sandwich bun.
  5. Add desired amount of jackfruit mixture to each sandwich. (Roughly 1/2 cup).
  6. Lastly, top sandwich with a few desired slices of purple onion to add extra flavor.
  7. Serve with chips, pickles, or desired sides.
  8. Enjoy!
