It is a delicious meal that is simpler than I think most of us expect!

Beyond burgers are one of the most popular plant-based burger brands out there in over 80 countries.

They are non-GMO, contain no cholesterol, antibiotics, or hormones and are absolutely delicious!

The Beyond burgers, (Beyond also has other amazing plant-based meats!) come in a pack of 2 or can be found in a box with 8 patties.

If the burgers are frozen, just make sure to defrost them!

Then, we can layer them with tasty toppings like avocado, tomato, onions, vegan cheese, etc. and serve a side of home-made french fries.

(Of course, we could buy frozen french fries that sometimes are necessary & make life easier…

but taking that extra step to turn potatoes into french fries is easy, fun, nutritious, and delicious.)

The French fries taste so good and go beautifully with so many sauces like Ketchup, plant-based ranch or blue cheese, or even apple cider vinegar!

I also have below a quick DIY vegan honey mustard that works great as a dipping sauce with your fries.

Let’s get started.

INGREDIENTS:

Beyond Burgers (pack of 2)

Burger Buns (plant-based brands)

Plant-Based Sliced Cheese or shredded

1.5 Tbsp. Plant-Based Mayonnaise

1 Ripe Avocado

1/2 Yellow Onion

1/2 Medium Tomato

1-2 Large Russet Potatoes

1 Tbsp. Olive Oil

2 Tsp. Salt

1 Tsp. Pepper

1 Tsp. Garlic Powder

1 Tsp. Onion Powder

1 Tsp. Old Bay, if desired

VEGAN DIY HONEY MUSTARD:

2 Cups Plant-Based Mayonnaise

6 Tbsp. Yellow Mustard

2 Tbsp. Maple Syrup

1 Tsp. Garlic Powder

1 Tsp. Onion Powder

1 Tsp. Salt

If you are a fan of honey mustard, this home-made, vegan ’honey’ mustard is unreal.

BEGIN THE RECIPE

I start with the vegan honey mustard first so I can store it in the fridge and not have to worry about it. (You can always quickly make it later in the recipe though)!

Begin with a small-medium bowl or jar with a lid to store.

Mix 2 cups plant-based mayonnaise, 6 tbsp. yellow mustard, 2 tbsp. maple syrup, 1 tsp. salt, 1 tsp. garlic powder, and 1 tsp. onion powder.

Once the consistency is smooth, seal and store the vegan honey mustard in the refrigerator until the food is cooked.

Now we can jump into the fries!

COOK THE FRENCH FRIES

If you have an air-fryer, it will give these home-made French fries an extra crisp.

Don’t worry if not!

They will still be extra delicious and you will want to preheat the oven to 425 degrees F.

Begin with washing the potatoes.

In this recipe and picture below, I only used 1 very large russet potato. Feel free to do 1-2 based on size and amount preference!

(You can peel the potatoes before cutting them- but I leave on most of the skin to keep nutrients).

Cut each potato in half, lengthwise– and again into fourths until you get a good thickness for your French fries.

In a medium sized bowl, add cut potatoes, 1 tbsp. olive oil, 2 tsp. salt, 1 tsp. pepper, 1 tsp. garlic powder, 1 tsp. onion powder, and 1 tsp. old bay, if desired.

Combine to evenly coat French fries.

Place the French fries in the oven on a lined baking sheet (or into the air fryer) until they are golden brown and crispy ~20-25 minutes.

COOK THE ONIONS

To begin the onions, heat a lightly oiled small-medium pan.

Next, slice 1/2 yellow onion and place in heated pan with oil.

Allow onions to become translucent and slightly browned. This should take around 7-10 minutes.

COOK THE BEYOND BURGERS

Also, place a medium-large pan on medium heat. *Do NOT add oil unless necessary.

(Beyond burgers have plenty of oil that comes out while cooking).

Once heated, place the Beyond burger patties directly onto the pan.

Flip the burgers halfway through until cooked well, about 10-15 minutes total.

While the burgers cook, begin prepping the toppings.

PREPARE THE TOPPINGS

Slice tomato into desired thin strips, set aside.

Mash avocado into a small bowl and add seasonings like salt, pepper, onion powder, and garlic powder, to desired taste.

Once the burgers are cooked, add vegan cheese to each patty and allow time to melt (~3-5 minutes).

I use plant-based cheese slices or shredded cheese to top the burgers.

*Warm burger buns now.

If not warming burger buns, plate them and add plant-based mayonnaise to bottom bread.

Now, place cheesy burgers onto the bottom burger bun.

Top with sautéed onions and tomato slices.

Spread avocado mash onto top bread.

Sprinkle salt & pepper if desired and your Beyond burger is finished!

Serve with a side of the home-made French fries and your choice of dipping sauce – don’t forget the honey mustard!

Honey Mustard

  • 2 Cups Plant-Based Mayonnaise
  • 6 Tbsp. Yellow Mustard
  • 2 Tbsp. Maple Syrup
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Onion Powder
  • 1 Tsp Salt

Instructions
 

Honey Mustard

  • In a small bowl or jar (with lid to store), mix in 2 cups of plant- based mayo, 6 tbsp. yellow mustard, 2 tbsp. maple syrup, 1 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. salt. 
  • Store in the fridge until ready to serve.

French Fries

  • Preheat oven to 425 degrees F or start your air fryer on medium setting.
  • Wash potatoes (you can peel the potatoes before cutting them or leave the skin to keep nutrients).
  • Cut each potato in half, lengthwise– and again into fourths. Then slice into ¼ inch thick pieces.
  • In a medium sized bowl, add cut potatoes, 1 tbsp. olive oil, 2 tsp. salt, 1 tsp. pepper, 1 tsp. garlic powder, 1 tsp. onion powder, and 1 tsp. old bay, if desired.
  • Combine to evenly coat French fries.
  • Place the French fries in the oven on a lined baking sheet (or into the air fryer) until they are golden brown and crispy ~20-25 minutes.

Sautéed Onions

  • Heat 1/2 tbsp. olive oil in a small-medium pan.
  • Slice 1/2 yellow onion and place in heated pan with oil (allow onions to cook and become translucent).
  • Remove from heat when beginning to get slightly brown.

Beyond Burgers

  • Place a medium-large pan on medium heat. *Do NOT add oil unless necessary (beyond burgers have plenty of oil that come out and help it while cooking).
  • Once heated, place the Beyond burger patties directly onto the pan.
  • Flip the burgers halfway through until cooked well, about 10-15 minutes total.
  • While the burgers cook, begin prepping the toppings.
  • Slice tomato into desired thin strips and set aside.
  • Mash avocado into a small bowl and add seasonings like salt, pepper, onion powder, and garlic powder, to desired taste.
  • Once the burgers are cooked on both sides add vegan cheese slice or shreds to each patty and allow time to melt (~3-5 minutes).
  • To speed up melting process you can add about 1-2 tbsp. of water and cover.
  • Warm burger buns.

Assemble

  • Once warmed, plate them and add plant-based mayonnaise to bottom bread.
  • Place cheesy burgers onto the bottom burger bun.
  • Top with sautéed onions and tomato slices.
  • Spread avocado mash onto top bread.
  • Sprinkle salt & pepper if desired and your Beyond burger is finished!
  • Serve with a side of the home-made French fries and honey mustard, enjoy.
