Ah, breakfast burritos filled with tofu scramble to start the day beautifully.


And even better, there will be plenty of tofu scramble to feed the whole family, or to store for a few more future breakfasts!

These breakfast burritos are absolutely delicious, filling, and simple to make.

Let’s dive into the great plant-based nutrients they provide us with!

KEY NUTRIENTS

Tofu scramble is clearly full of tofu- which is a great source of complete plant-based protein.

Tofu also contains important minerals like potassium, iron, magnesium and manganese while also giving us a boost of fiber.

We can also expect some good minerals and vitamins from the tomatada, or the cooked tomato and onion mixture.

They also are great sources of antioxidants.

The slices of avocado in each burrito provide us with some healthy plant-based fats.

INGREDIENTS:

14 Oz. Tofu

6 Oz. Soy Chorizo

5-6 Tortillas (depending on portions)

1 Large Beefsteak Tomato

1 Yellow Onion

1 Cup Plant-Based Shredded Cheese

3 Tbsp. Olive Oil

1-2 Avocados

2 Tbsp. Nutritional Yeast

1/4 Tsp. Turmeric Powder

1 Tsp. Garlic Powder

1 Tsp. Onion Powder

1 Tsp. Salt

2/3 Tsp. Pepper

BEGIN THE RECIPE

To begin the recipe, we want to prepare the tofu.

This means draining the water from the tofu block.

Just like the recipe, vegan ramen, I use the ”Grow Your Pantry” tofu presser, every time.

Use the tofu presser or a paper towel to press out as much water as possible from the tofu.

To make the crumbling process easier, I slice the tofu into fourths lengthwise and widhthwise.

Next, wash and dice 1 yellow onion.

We will use 1/2 onion for the tofu scramble and the other 1/2 onion for the tomatada.

MAKE TOFU SCRAMBLE

Now, we can heat a large pan with 2 tbsp. olive oil on medium.

Add 1/2 yellow onion to pan, allowing them to cook for about 5 minutes.

Next, we can crumble in the tofu and mix in with the onions.

Now it’s time to add in the spices!

Add and mix in 2 tbsp. nutritional yeast, 1/4 tsp. turmeric powder, 3/4 tsp. garlic powder, 3/4 tsp. onion powder, 3/4 tsp. salt. and 1/3 tsp. pepper.

These seasonings will give the tofu scramble that “scrambled egg” color!

Allow tofu and onions to cook for a minute or two with spices mixed in.

Next, we can add the 6 oz. soy chorizo.

Mix ingredients, stir occassionally for about 7 minutes or so until tofu and chorizo are crisped up.

While waiting for this to cook, we can get started on the tomatada.

MAKE TOMATADA

Tomatada consists of a seasoned tomato and onion mixture, cooked.

It is delicious to top on the burrito and/or have on the side!

Begin with heating a medium sized pan with 1 tbsp. olive oil on medium.

Once warm, add 1/2 yellow onion and allow to sweat for a few minutes.

While they cook, dice 1 tomato and then add to pan.

Next, we can add the spices- 1/4 tsp. garlic powder, 1/4 tsp. onion powder, 1/4 tsp. salt and 1/4 tsp. pepper.

Stir to combine.

Allow mixture to sweat and cook for a few minutes, stirring occassionally.

Remove from heat.

Now we can start creating our burritos!

ASSEMBLE TOFU SCRAMBLE BREAKFAST BURRITOS

Assemble breakfast burritos by gathering tortillas and getting them ready (optionally warmed and plated).

Now we can wash the avocado and thinly slice pieces to top our burritos with.

On the first tortilla, add desired amount of tofu scramble.

Now, add a desired sprinkle of plant-based shredded cheese.

Next, place a few thinly sliced avocado strips on top.

Lastly, add desired amount of tomatada to top off the first burrito!

We can now wrap the tortilla by folding in the top and bottom sides (shorter sides) followed by wrapping the left side in the right side to close off the burrito.

Cut burrito in half, if desired.

I love to have a side of tomatada and avocado slices.


Continue to make burritos, 5-6 depending on portion sizes.

If you don’t make this many burritos, you can always store any leftovers in a container in the refrigerator for at least a few days.

  • Crumble sliced tofu with fingers into the pan, mix to combine.
  • Now add and mix in the spices: 2 tbsp. nutritional yeast, 1/4 tsp. turmeric powder, 3/4 tsp. garlic powder, 3/4 tsp. onion powder, 3/4 tsp. salt, and 1/3 tsp. pepper.
  • Allow tofu, onions, and seasonings to cook for a minute or two.
