Begin by draining as much water as possible from the tofu with a tofu presser or by pressing it with paper towel.
Slice the tofu into fourths lengthwise and widthwise.
Next, wash and dice 1 yellow onion (1/2 for tofu scramble and other 1/2 for tomatada).
Now, heat a large pan with 2 tbsp. olive oil on medium heat.
Add 1/2 yellow onion to pan, allowing them to cook for about 5 minutes while stirring occasionally.
Crumble sliced tofu with fingers into the pan, mix to combine.
Now add and mix in the spices: 2 tbsp. nutritional yeast, 1/4 tsp. turmeric powder, 3/4 tsp. garlic powder, 3/4 tsp. onion powder, 3/4 tsp. salt, and 1/3 tsp. pepper.
Allow tofu, onions, and seasonings to cook for a minute or two.
Next, add the 6 oz. soy chorizo.
Mix ingredients and stir occasionally, allowing mixture to cook for about 7 minutes or until tofu and chorizo are crisped up.
Start tomatada while waiting for tofu scramble to cook.
