Tofu Scramble Breakfast Burritos

Enjoy delicious breakfast burritos filled with tofu scramble, tomatada and avocado.

Ingredients
  

  • 14 Oz. Tofu
  • 6 Oz. Soy Chorizo
  • 5-6 Tortillas (depending on portion sizes)
  • 1 Large Beefsteak Tomato
  • 1 Yellow Onion
  • 1 Cup Plant-Based Shredded Cheese
  • 3 Tbsp. Olive Oil
  • 1-2 Avocados
  • 2 Tbsp. Nutritional Yeast
  • 1/4 Tsp. Turmeric Powder
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Onion Powder
  • 1 Tsp. Salt
  • 2/3 Tsp. Pepper

Instructions
 

Make Tofu Scramble

  • Begin by draining as much water as possible from the tofu with a tofu presser or by pressing it with paper towel.
  • Slice the tofu into fourths lengthwise and widthwise.
  • Next, wash and dice 1 yellow onion (1/2 for tofu scramble and other 1/2 for tomatada).
  • Now, heat a large pan with 2 tbsp. olive oil on medium heat.
  • Add 1/2 yellow onion to pan, allowing them to cook for about 5 minutes while stirring occasionally.
  • Crumble sliced tofu with fingers into the pan, mix to combine.
  • Now add and mix in the spices: 2 tbsp. nutritional yeast, 1/4 tsp. turmeric powder, 3/4 tsp. garlic powder, 3/4 tsp. onion powder, 3/4 tsp. salt, and 1/3 tsp. pepper.
  • Allow tofu, onions, and seasonings to cook for a minute or two.
  • Next, add the 6 oz. soy chorizo.
  • Mix ingredients and stir occasionally, allowing mixture to cook for about 7 minutes or until tofu and chorizo are crisped up.
  • Start tomatada while waiting for tofu scramble to cook.

Make Tomatada

  • Begin with heating a medium sized pan with 1 tbsp. olive oil on medium.
  • Once warm, add 1/2 yellow onion and allow to sweat for a few minutes.
  • While they cook, dice 1 tomato and then add to pan.
  • Next, we can add spices: 1/4 tsp. garlic powder, 1/4 tsp. onion powder, 1/4 tsp. salt, and 1/4 tsp. pepper.
  • Stir to combine.
  • Allow mixture to sweat and cook for a few minutes, stirring occasionally.
  • Remove from heat.

Assemble Breakfast Burritos

  • Gather tortillas and get them ready (optionally warmed and plated).
  • Now we can wash the avocado and thinly slice pieces to top our burritos with.
  • On the first tortilla, add desired amount of tofu scramble as base.
  • Add a desired sprinkle of plant-based shredded cheese.
  • Next, place a few avocado slices on top.
  • Lastly, add desired amount of tomatada to top off the first burrito!
  • Now wrap the tortilla by folding the top and bottom sides in (shorter sides), followed by wrapping the left side into the right side to close off the burrito.
  • Continue to make burritos, 5-6 depending on the portion sizes.
  • If desired, have a side of tomatada and avocado slices for burritos.
  • Plate and enjoy!
