Plant-based, or vegan pancakes are deliciously made from scratch (and dairy & egg-free) making them a perfect breakfast!


Not only are the ‘plain’ pancakes with melting butter and warm syrup heavenly

but adding bananas, strawberries, or chocolate chips is extra delightful.

And, trying out different combinations of pancakes within your stack adds extra, mouth-watering, flavorful twists.

Experimenting with delicious add-ins like these, or add-ons like cinnamon sugar butter, is super fun.

Getting creative with add-ins and add-ons to your vegan pancakes can go even further by adding healthy ingredients.

These healthy ingredients add an extra morning boost of vital nutrients.

Vegan pancakes contain a good dose of chia seeds (tasteless!) that boost your omega-3’s, fiber, protein, and more!

This helps prepare your mind and body for the day ahead.


Create a chia seed egg:

Mix 1 Tbsp. chia seeds in a small bowl with 3 Tbsp. water.

Warm water works better to help the seeds soak.

Stir and let sit (chia seeds will absorb most water).

I personally love to serve these pancakes with a side of something.

For me, that means balancing out the sweet with the salty.

I enjoy plant-based bacon (or sausage links/patties, and of course you can choose a bowl of fruit or anything you desire)!

Now that we know about these delicious vegan pancakes, their add-ins/add-ons, and some tasty sides…

Let’s get started.

INGREDIENTS:

1 1/4 Cup Flour

2 Tsp. Baking Powder

2 Tbsp. Brown Sugar

1 Chia Seed Egg (instructions above)

1/2 Tsp. Salt

1 Cup Water

1 Tbsp. Oil

2 Tbsp. Butter (coating skillet)

Optional Toppings or Add-Ins:

Plant-Based Butter

Cinnamon Sugar Butter (DIY)

Maple Syrup

Sliced Bananas

Sliced Strawberries

Chocolate Chips

The amount for the optional toppings or add-ins while the pancakes cook is completely your preference on which and how much.

Begin The Recipe

To start, prepare your chia seed egg and set aside (instructions above).

Begin to make the pancake batter by measuring out the dry and wet ingredients.


Next, add the dry ingredients to a medium bowl by starting out with 1 1/4 cup flour.

Follow that with 2 tsp. baking powder, 1/2 tsp. salt, and chia egg.

Now, whisk in 1 tbsp. oil and 1 cup water. (Add water slowly and whisk throughout).

This should yield almost exactly 2 cups of pancake batter.

The consistency should be thickening up, try to find the right balance between thin and thick.

You can always add more water (if batter is too thick) or flour (if batter is too runny) in small increments to get the batter right.


Make Vegan Pancakes

Once the batter is completed, heat the skillet (or skillets if making plant-based meat/other sides) on medium.

Add 1/2 tbsp. plant-based butter to skillet. (I always use butter for pancakes- you can interchange for oil if needed).

Once heated, pour about 1/2 cup pancake batter into the skillet.

Allow pancake edges to form and center to bubble, then flip pancake.

Depending on the types of pancakes I want to make, I will set up small bowls on the side to add-in.

(Bananas brown in open air, so try to time slicing the banana accordingly).

I also have the plant-based bacon cooking at this time (medium heat).

Once the pancake is evenly cooked on both sides, take off skillet, and cover the pancake on a plate to keep it warm.

Add about 1/2 tbsp. plant-based butter and coat skillet for next pancake.

Add-ins (Fruit, Choc. Chips)

For this recipe demonstration, I made a ’plain’, banana, chocolate chip, and strawberry pancake (4 total).

WARNING: I chose (for some odd reason) to make the chocolate chip before the strawberry pancake, that is why the strawberry pancake looks brown on the edges from the leftover chocolate!! (Chocolate strawberry actually tastes amazing though- so I left it)!

For the add-in pancakes- banana, chocolate chip, strawberry- I make them the exact same way as above (‘plain’ pancake).

I add-in the fruit and choc. chips once I have poured the batter.

Banana Pancake:

Pour 1/2 cup pancake batter onto heated skillet, coated in 1/2 tbsp. butter.

Next, add desired amount of banana slices.

Allow pancake to evenly cook on both sides.

Remove from heat and place banana pancake on a plate, covered.

Follow these same steps with the chocolate chip and strawberry pancakes.

(Make your chocolate chip last if you don’t want leftover chocolate in the skillet cooking into your other pancakes like I did)!

Chocolate Chip Pancake:

Once the chocolate chip pancake is done, place on a plate and cover.

For me, the strawberry pancake came next.

The chocolate chip pancake made this strawberry pancake chocolately, whoops, but honestly- it’s DELICIOUS.

Once the strawberry pancake is cooked thoroughly, remove from heat and add to stack.

Now that you have 4 beautiful pancakes, you can start topping them however you like!

Add butter and/or syrup.

I also love to make a cinnamon sugar butter that simply is butter with some sprinkles of cinnamon and brown or white sugar.

Ingredients
  

  • 1 1/4 Cup Flour
  • 2 Tbsp. Brown Sugar
  • 2 Tsp. Baking Powder
  • 1/2 Tsp. Salt

  • Plant-Based Butter (Or Cinnamon Sugar Butter)
  • Syrup
  • Banana Slices
  • Chocolate Chips
  • Strawberry Slices

Instructions
 

  • Make chia seed egg by mixing chia seeds with water in a small bowl. Set aside.
  • In a large mixing bowl, make pancake batter by combining flour, brown sugar, baking powder, salt, oil, chia seed egg, and water.
  • Heat 1/2 tbsp. butter in a skillet on medium heat.
  • (If making plant-based meat as a side, heat skillet now and start cooking).
  • Add around 1/2 cup pancake batter to the heated skillet.
  • Flip pancake once bubbling, evenly cooking on both sides.
  • Place pancake on a plate, covered to keep warm.
  • Add 1/2 tbsp. butter and heat in skillet.
  • Add 1/2 cup pancake batter once heated and repeat steps. (If adding bananas, choc. chips, strawberries, etc. then add in once you pour batter in).
  • Continue making desired sized pancakes until batter is used up. (Yields around 4 medium pancakes).
  • Add desired butter, syrup, etc. to your plated pancakes and enjoy!

    I have been struggling to find a vegan pancake recipe that I truly enjoy. This recipe blew my mind! Not only was it fairly easy to make, but the results were absolutely delicious! 10/10 recommend giving it a try.
