Make chia seed egg by mixing chia seeds with water in a small bowl. Set aside.
In a large mixing bowl, make pancake batter by combining flour, brown sugar, baking powder, salt, oil, chia seed egg, and water.
Heat 1/2 tbsp. butter in a skillet on medium heat.
(If making plant-based meat as a side, heat skillet now and start cooking).
Add around 1/2 cup pancake batter to the heated skillet.
Flip pancake once bubbling, evenly cooking on both sides.
Place pancake on a plate, covered to keep warm.
Add 1/2 tbsp. butter and heat in skillet.
Add 1/2 cup pancake batter once heated and repeat steps. (If adding bananas, choc. chips, strawberries, etc. then add in once you pour batter in).
Continue making desired sized pancakes until batter is used up. (Yields around 4 medium pancakes).
Add desired butter, syrup, etc. to your plated pancakes and enjoy!
